that's alot of questions at once!
But to answer you the first ones shortly:
1) The background of the iPod Touch is really sensitive, it will be scratched if you don't use any protection case, but me for myself I got used to it.
And it's all up to you, whether you can live with some scars on the back or not, it's not important for anything ...
All in all you should not drop your iPod touch so often

But there is alot of cases.
Some are more stylish and others protect very well.
So you may browse youtube (my first tip, because I just got 1 case) and look, if you like it.
They are reviewed there and often you get an extra feedback on its usability.
I'd love to tell you, that the otterbox case is offering you good protection, but atm they do not have it available for the iTouch, but due to high request they are going to set it up again. So it's up to you, what you wanna do.
In case there are alot of serious case companies: Belkin, gear4, CaseMate etc., just look for some.
And you also have to decide, if you want a screenprotector or not.
So basically you do not need, if you have a case, that fully protects you iPod.
If you have a case, that just defends your back from scratches and your forefront if it drops, you should put a screen protector, because if you have it in your trouser pocket with keys and stuff, it might damage the front.
So a case is a must I think, I got a mate without any, he is not fussy with his iPod and it doesn't look delicious, because the front is scarred.
2) The iPod has an integrated Wifi connector, so as long as you have a router, that is wifi-able, you just need to enter the pw of your wifi ( if there is any) and then you can start of.
Note: It just works with wifi. Otherwise you would need an iPhone with a contract, which is not adorable =P, but that would work w/o wifi then.
And it is totally free, because you use your wireless connection, like you can do with computers.
3)Concering the games: I've already played alot of games and I can surely help you.
So far I can tell you, that there are lots of goodies, also for multiple players.
Atm I'm not on my computer so I'm not able to manage everything right now, but within the next few days I can give you short reviews on Apps.
As a help you can always browse in youtube for reviews on games and applications or simply look, with how many stars the application is reviewed in the app-store. Be careful with the notes from anybody about a game, but in case the overall result should be informative.
Also look for free versions of a game, it's always cool to test a game if there is any available.
