it would stop sinking at a certain point because the water pressure outside of the sub is going to be much greater than the water pressure inside of it

Water is a liquid, you dense shit. Hence, it's pretty obvious water has an incredible resistance to compression. The pressure water at lesser depths exerts on the water at greater depths does not even come to increasing the density enough to suspend a dense object like a flooded sub.
