Are there any builds where I can use Griffons without Infinity? I'm on single player and was kinda lucky

Same builds, less effective. Java and lite sorcs.

Also some builds really need the 20fcr in help for speed and 2/20s are rare on SP

You can go mosaic without infinity and still smash
