I'm looking for some insight as to which character/build I could go for, farming travi on p8 for them HRs.
I've been looking at a barb build of sorts, but can't quite figure out if that's the best way to go.

This is on SP, but I most likely can get the required gear, except for end game charms.

barb will struggle to clear p8 travi quickly. any sorc, hdin or mosaic will likely do it more efficiently

e: but at that point spamming chaos runs would make more sense

I'm already running chaos/terror zones as a sorc, and sometimes cows as a java, and was hoping for some variety character wise.

Is the key takeaway here not to run a barb in trav at all, or that I should rather lower the player count?

trav barbs can often be very rewarding, and honestly quite fun to play, in low player count games. but if you're able to farm p8 content comfortably on a sorc or zon then there's no argument for it being an efficient option.

you should definitely try out a pit/trav/chaos barb on p1-3 though and keep going if you find it enjoyable

There is no difference in drops for P5 and P8 in Travi
So if you want it as easy as possible P5 is the way to go
