Can anyone please explain or show me a website that outlines exactly how many and which affixes (I think I've also seen them referred to as automods, staffmods (sometimes pointmods)) can spawn on white item bases please?

Maxroll has a bunch of resource on mechanics.

However I find the drop calculator is best because automods + staffmods + socket count on base is tricky to map out. When you use the item drop calculator pay attention to ilevel of item and set the socket count you want. Then select the mods - if some options are greyed out or the drop chance is 0% then you need to tweak the ilevel. Once you find the right ilevel you can look at an alevel table to figure out which area+difficulty to farm.

For rares there's rerolling mechanics not covered by drop mechanics.
