The benefits of extra dexterity don't stop at AR. For what little it is worth, extra dexterity also boosts your defense. If you're running FK, which I prefer versus a zealer, you're also getting a damage bonus per dexterity point.
There is a balance to be maintained. My personal take is to find an amount of life that you're comfortamble with, varying per what you know of your opponent, and pump the rest into dexterity.
I would definitely calculate whether or not the defense gained would offset the life lost.
Funny enough, it may just balance out. If you gain enough defense to prevent an extra hit over the course of the duel, and your opponent is pumping out damage equal to the life you lost, then it's a wash.
So you really need to know your opponent's average damage and attack rating to know whether more defense is better than more life. Fortunately, there aren't that many different builds and it should be pretty easy to come up with an average paladin attack rating and damage. Then use the calculator here to check hit %:
