Anyone have an opinion on how much of a difference it makes having your fort/coh in heavy armor like SA vs. AP? Is the 10% speed increase on merc noticeable or worth the lower def?

It's definitely worth the lower def. How much a difference it makes will depend on how much you let your Merc walk around.
