Well assuming AR is the same in all situations, isn't the only variable for EHP health/armor?
No. You would need to know your opponents damage as well.
But while your opponents AR might not change, if you don’t know what their AR value is, then you have no idea how adding 1 defense affects their hit rate. Because the to hit formulae is a ratio. Which means you need to know both sides of the equation to know how changing 1 of the values affects the other.
Then on top of that, you would need to know your opponents damage value to determine how much 1 Def affects your life. As without knowing the damage of your opponent, you are only able to calculate your opponents hit rate. But a 1% increase in your opponents hit rate affects your life differently depending on their damage. If your opponent does 100 damage, and you are able to lower their hit rate by 1%, that’s an eHP increase of 1. But if they do 1000 damage, it an eHP increase of 10. But again, to even know this, you would need to know both your opponents defense and their damage. Which you won’t know.
Which is why eHP is not a meaningful term in d2, outside of the zon example.
