I guess it's a matter of preference

With GMB+Nosfe I find that clearing packs is instant/easy really so I never felt the need to reach 100% pierce. High-hp single targets such as bosses can be an issue though and vs them pierce doesn't help at all so better have higher damage. Higher damage also means higher cold damage with Cold Arrow vs phys immunes (I have Cold Arrow maxed btw).

One small thing that I do differently aswell is the helm: I use a 30dex base (and I'm stated as a glass-canon ofc), that also pimps damage. Frw isn't an issue considering I have 7frw/10max/xxar GCs and Harmony on swap.

Btw I also feel the same about Atma's (outside of Strafe builds), it just doesn't proc frequently enough with Multi/GA.

afaik pierce is combined with attackrating... so U actually only have as much pierce as Hit chance

Not true. Only if you have 100% pierce chance, piercing attack will only depend on your chance to hit. In all other cases, piercing attack will depend on both - chance to hit and chance to pierce. So if you have 100% chance to pierce and 95% chance to hit, you will pierce the first target 95% of the shots, second target 90% of the shots, third target 86% of the shots and so on. if you have 87% chance to pierce and 95% chance to hit, you will pierce the first target 83% of the shots, second target 68% of the shots, third target 57% of the shots and so on. As you can see when chance to pierce is not 100%, piercing attack degradation percentage is higher.
