I'm going to start doing a lot of lvl 1 mining missions. Need a basic ship with decent cargohold that doesnt have a lot of training requirements, but I don't have much familiarity with the game or ships

It really depends on what race you went.
I would probably stick with the frig of your race, that offers a mining bonus (you'd have to look at the market for that)
And then upgrade into the cruiser that offers a mining bonus (again look at the market)
And if you really enjoy mining, head into a mining barge and then eventually a hulk.

i started caldari

and from the tutorial missions ive been using a cormorant... but it doesnt even hold enough to do these mining missions in one trip

Back in the day when I would do mining as Caldari, I remember using an Osprey because of its ship bonuses for mining. Used one up until I could operate a Hulk.
