Electronics and Engineering to level 5 is always a good start.
Anything and everything in the Engineering skill tree are great skills to have. Train as many of these skills up as fast as you can. Level 3 for a lot of these skills is a good start point.
I can't stress enough the use of Damage Control II. This will reinforce your entire ship from hull to shields. Train for these as soon as you're able.
If you are going to be running missions, it is my suggestion you train to fly a Caracal. This ship should walk on every level 1 and 2 mission with ease with little to no reason to change ammo type, or hardeners. Caldari frig IV and Caldari cruiser III are the core skills you need. Missile skills come a bit slower.

zzz, im pretty sure only 2 of my posts had nothing to do with this thread.
Anyway I haven't seen anyone suggest it yet, but google EFT. Its a program that allows you to build a ship, figure out your dps (based on skills + mods + Other factors) Figures out your tank vs type dmg (ie - i think - Guristas' are like 60-70 thermal 30-40 kinetic) This program allows you to basically build your ship - out of game - and figure out all the details before you go into the game and purchase + fit the mods. It saves time and money. Its a sweet program and I highly recommend it.
And it works just like Evemon where it figures out your skills from your API, so you'll only have to bother pulling it once (if your setting both up at the same time).
Also, although i don't pve much (and you did not state which race you would go) i figured i'd let you know that the above ship + build is mainly caldari)
Also don't worry about picking a class, the only thing you get from it is a few basic racial skills that help you train faster for more class related ships. You can always cross train and have multiple ship abilities. Although I do not recommend doing that, unless the character is for personal use. If you plan on selling the char down the road, then stick to one class and make is specialized in that class. Amarr specialized char's are really hot right now. Most of the pvp is focused around amarr and mini ship types.
Back to the subject of cross training, if you do cross train then most likely it will take you even longer time to master the 2 races, rather than mastering 1 race; which is much faster ofc
