Im gonna go with swords.

How much ee and dmg should the swords have at the levels: 10, 25, 40, 55 ?

And how should the armors and charms at those level look like?

It depends on how much you want to spend on this game. I generally go with ~100ee per 25+ sword. You'll be able to do decent damage. If you're willing to spend more fg, then get higher ee on your swords.
The same applies with armor/charms but you need strength on them. As much strength as possible on these items as you're willing to pay.
