Strength and Dexterity play a key role in adding to the damage you will do with a particular weapon type. You should try to stat your character according to the weapon you will be using.

Swords & Clubs = pump strength
Daggers & Staffs = pump dexterity
Axes = add to both and keep them equal

The inferior stat (dex for swords/clubs, etc.) is the crit component for your weapon. I usually keep my ratios as even as possible to the stated ratio since I notice a significant increase in damage output.

really? I thought the more true you keep to the ratio, the better your crit chance, and better damage overall

That's what was told to use by njaguar. The only instance where that doesn't take place is with axes.

Yes, I've heard from a few that making their str a little bit higher increased their average.

However, you still want the higher ratio percentage to be greater than the other because you still want to do damage consistently and not rely on crits.

So you need to figure out a good balance with your gear. Although if you always hit your ratio, you are guaranteed to be doing good damage of your weapon.

Axes are unique as they are both equal to each other and are basically straightforward.
