I am restarting LS again. Starting again on my fighter. My question is if I should use axe or sword. Also, what str/dex/vit should I be aiming for before adding stat charms.

I would use swords if I were you, since you can use them on the first three classes.
You want to aim to have about 30 more strength than dex WITH your gear on, I have no idea without it.

Don't add any points to vitality.
