I was thinking of Fighter cuz Paladin and Samurai can wear swords too
So I would only need to buy a set of swords (Armor too) and be able to play through these classes for GP then redo

Swords set +EE
Good Armor +EE/Str
Charm +Str

And what stats should I put? Full Str?

Yeah pretty much buying a decent set and be able to farm GP for FG and equips forever ;D
Not really planning to go higher than Monk

you have the right idea for that plan, but
what happens when you get 16 monks?

Maybe by that time I'll have enough FG to buy another weapon set... what is best for monks?
Oh and what's the estimated price range of a sword set etc etc :o

why would he? He can just reset the char. Lol.
