or should I switch to a armor with high EE? i can hardly fight in the arena taking that much damage. figured i would ask the experts

Personally I would have added more vit just to be safe. (maybe 60-65 total) That usually will allow you an extra kill or two in arena.
I've been using EE armors since I started HC, and they seem to work alright. I manage 1-7 chains at 60+with a 142ee armor, 117ee 50 weapon, 45 dex charm, and slightly lower stats than you have. Slow, but it gets you there.
