If you're going pure melee in the catacombs it's pretty much exactly the same. although you'll need to use robes and a different weapon, the basic stats to look for are the same.

although if you're going to be sitting at the back in catacombs you don't need any dex. just pump pure str.

Well there are many types of monks but you mentioned simple so that would be pure melee.

budgeting shouldnt be too much of a problem since staffs are relatively cheap.
so as much ee as possible on the weapon go lvl 0,5, 10,15, 25,35,45,55 since the lower lvl staffs are cheaper

armor: robes as many stats as possible
charms: as many stats as possible str/dex ofc

all in all similar to the fighter except you wear robes and use staffs instead of swords and plate/chain mails
