ok so when i go to make a character i dont get options of like paladin and ninja and monk and all those, i just get guardian rogue fighter barbarian and those kinds

so how do i get access to the other ones?

You have to unlock them by passing the Master Quest.

Ie: Pass with a feeder class (Rogue, Gauradian, etc.) You will unlock the Samurai, pass with Samurai you unlock the Paladin.

ok so i read the classes and master quest about having to reach lvl 71 and all, what is the master quest? or does it vary

You will have to find out for yourself.
The Master Quest is just a matter of luck ^_^

You mean you have a monk who sits on your account :P though I'd probably rather play Paladin as well if I had a choice between the two.
