I'm new to the game

I've been watching streamers for drops but they dont ever give out mounts it seems, been watching for like a week.

You'll most likely have to buy a mount from the Market using gold. You can purchase around 4k gold with 120fg but mounts typically sell for more than that depending on the type you want.
