I haven't ever played an MMO how do guilds work in this one. If I join a guild with one character will all my characters be in that guild or is is separate for each? I plan on having 4-6 characters for grinding depending on how much time I have to play.

Guilds are per character based and not account based.

Oh and can I switch servers by paying? I think my friends won't be playing until the 11th and I want to make sure we all get same server.

That one I’m not sure, probably not.
It should be easy being on the same server but, you just choose the realm that you want on your login screen.
