So I'm currently useing Focus and Restraint on my multishot DH like every other DH.

But I've found two rings with disc on. Soj and Manald heal, both with 10 disc on.

Focus and Restraint proc gives 2 x 50% dmg increase

two rings with 10 disc each is 2 x 10 disc.... which is 20 disc and 20 disc is 400% dmg increase.

Why is it, that people use focus and restraint instead of having 20 disc more?

400% > 100%

is there a sheet for how it works?

is it like:

2x400+500 = 1300

but 2 x ( 400+500 ) = 1800

so how the numbers add up in the damage, it different with focus and restraint, compared to disc rings?

Say you already have 50 discipline your damage bonus from set is 2000 another 400 is only a 20% increase in dps.

Focus and Restraint literally doubles your damage

This. To go a littler more into detail, different base multipliers (elemental %, skill %, main stat %, bane of the trapped unique gem, different categories like that) are multiplicative whereas adding more % to the same multiplier you already have is additive, like Laminate said.
