Whats the problem? Taking too much dmg? The HP scaling is stupid after about MP5. Unless you've got over 100k dps, there's no point in wasting the time since everything has so much health it takes many times longer to do stuff. BTW I have seen GG shield monks with about 100k dps and they are fine in higher MP levels. Get a shield with ~300 dex with high crit, and if you can get your res on it and maybe health or life% and block%.

I know if I get better weapons, it will increase.
But 2 x 1100+dps weapons with, dex, LS, high natural crit dmg and socket will run me huge gold (1 Billion)

You want higher dmg, it's gonna start getting expensive, lol. It's hard to guage the 30-60 dmg on that ring, seems like it might do a lot, but if not the Cdmg on it is pretty poor so you could at least replace it with a high dex/crit/asi ring. Your pants have good EHP on them but they are nerfing your dmg output. Think about getting innas helm and pants or belt. Your ASI from the Andys will move to the innas pants and your movement speed right there, and will probably net you 3k dps. You could look at the crit from 2pc nats as well, since those boots aren't really doing much for you either. Alternately you could just get ice climbers on your boots and that will give you enough EHP boost that you can afford to switch out one of your more defensively stacked slots.
Trifecta gloves. Yours have high dex as it is so that will be expensive. But hey, you asked for input, lol.
You could look at a witching hour belt, that will help out a lot.
The Shenlong is mediocre, you'd be better off getting a high dps/LL/OS/cdmg offhand to pair with the EF. This will buff both your DPS by a considerable amount and your survivability from doubling your life leech. You don't need dex on your weaps unless you can afford it easily. It's not worth nearly as much as a higher DPS weapon imo.
You say you want more dmg and MS, but then you say you don't want to lose defensive stats. So your choices are either don't change your gear, or spend insane amounts of gold on something with high stats on everything. Or, trade some EHP for DPS. The easiest option that does both is getting a LL offhand. Big dps gain, and big EHP gain through LL.

Shameless plug, I do happen to have poison nats boots and ring for sale, but the dex is low on them. Just fyi.
