Mana regen

I would choose the mana, you can always recover mana from other things like health orbs, voodo, jaunt, but you need a big mana pool to kill elites on higher MP

to answer the original question; it totally depends on what mana you already have, what mana regen you already have, and more. I guess

I use zunimassa set, my helm has def not reg mana.. So.. then.. what's is more necessary? Reg mana or max. mana in high mp (7 or 10). Or it's possible dont use them?

Unless you use Spiritual Attunement, then I would go with mana regen on a Uhkapian. Getting max mana wouldn't be as useful without SA, you would still run out of mana faster because you won't be regaining mana as fast.

More mana = 1 more cast
Mana regen = sustainable spamming
Max mana with SA = more mana and more mana regen

MY passives would be SA + Vision Quest + other. With them and zunimassa set is necesarry a mojo with max. mana or reg mana?

In that case I would go Max Mana. With SA/Zuni you should be regenning a pretty hefty amount of mana, then it's just a matter of having enough to sustain long fights.
