If there is a 1050 dps sword with dex, and 1050 dps sword with ias, which one should I get? That's what I meant. I don't think I'll ever be able to afford a better one

go with dex.

i've tested this. your 1050dps APS sword will ONLY be 1050dps because of the attack speed being factored in. the base damage of the weap WILL be lower than the 1050dps//dex sword. not only that but you wont have +dex which translates to %damage added from base stat, and yes, less to add to dodge chance.

From what i've gathered so far we want high attacks per second + high crit to increase cyclone damage. APS and Dex increase the damage we deal in differentt ways. Dexterity scales really well though, think i get 2k dps per 40 dexterity or so, that's pretty heavy imo. I really can't see some ias beating the ~100+ dex we normally find on swords. I'm still learning the class and don't feel content with my knowledge just yet, so any monk guru feel free to comment on what i've said. =)
