It's really hard to get enough mitigation to do anything against a good impale DH. They will have at least 300k dps, with a 1300+ 2 hander with 400%+ CHD, which is easily a one shot unless you have 2.5m+ ehp. Your best bet really is strategy and positioning...it's not easy. SS is OP. Monk needs to be way more skilled than DH to win, I really believe. Imagine if we could TR every .5 seconds, for 1 second minimum, while invisible, and cast a long range palm. That's what it's like playing a DH, so that's what you have to counter. So you need to predict where they will pop out and be ready.
What this means, is you need to force them to end up where you want them to be when they pop out. Position yourself so they have the fewest LoS options to you, and make sure they get there at the right time. Then, you can TeleSSS or blind+EP/bell them.
You've only got a few chances since impale is almost always a 1 shot, so you have to either dodge, block, Serenity, or SSS it.
I find LPS doesn't help all that much against DH, since you're not really taking a little dmg here, a little dmg there. They are looking for the impale crit to one shot you. If you had almost 6k lps/200k health, like a good barb, then it might be a different story. But barb gets that from passives, not gear, stacking vit which scales with LPS passive, so monks can't get that kind of regen.
Your only other option, is to go with BT set stuff, at least 90%+ life from gear, and elite DMG reduce from stormshield/rings/sets, etc. If you can maintain 80k dps+ with this setup, and 150+k life, you may have a shot at surviving an impale crit and whittling down a good DH with 90k+ health, with 2 or so palm crits.

But yeah im not expecting to win against these DHs. Ill be happy to get couple kills.
