Dice up peppers, mushrooms, and ham.
Sautee with some low sodium soy sauce.

Take a muffin tin..
Fill each hole with spinach.

I avoid the yolk because of the Cholesterol and the Arachidonic Acid which has an inflammatory nature. I have a history of Heart Disease in my family so every precaution I can take I try to. Not eating egg yolks is one I don’t even notice. I agree that egg yolks aren’t horrible and won’t tank a diet or healthy lifestyle by eating them. But for me the cons outweigh the pros so I stick with the egg whites :P

I didn't realize Arachidonic Acid was in egg yolks or it was inflammatory! In fact, it has been marketed as a supplement for athletes and may actually reduce inflammation!

Technically we're both correct! That's the interesting part about Eggs, and why I chose to transition to Egg Whites vs Whole Eggs.

Eggs can influence the body's inflammatory response in both pro- and anti-inflammatory ways. Depends on the person.

Most of the research out there say it depends on things such as weight and presence of disease. These factors will change whether the response in an individual is positive or negative.

I tend to bloat more when I eat Whole Eggs. I haven't done any clinical sensitivity testing so I can't say with 100% certainty that it's just the Egg Yolks, but I can say that for me, I feel a lot better eating Egg Whites instead.

tl;dr - just pay attention to how you feel, because for some people Egg Yolks can cause bloating.

100%

I used to get bloated after eating whole eggs. But I love eggs! What I found that works for me is liquid fish oil. Then shortly after a shot of diluted ACV with curcumin, cayenne, lemon juice, and ginger. (Wakes you up better than a coffe btw) This worked for me and have been eating whole eggs without the that “heavy” feeling.

Curcumin and ginger are great anti-inflammatory spices. Apart from all the other positive properties they have.
