I'm planning on quinoa / steam / vegetable bowl... drank close to a gallon 1/2 per day over the past week as well.
Also.. what about tomorrow? It's a 7 am test

What time do you normally get up. That will impact food choices. No point in waking up extra early just to eat a big carb meal 3 hours before if that's not your normal routine anyway.

For instance if I had 3 hours before comp I'd be crushing oatmeal and fruit because it's what I'm used to a it sits well. If it's one hour before workout I'm going way lighter, some toast and probably dried fruit.

correct, i'm usually up around 6:00 am so i certainly won't be waking up at 4:00 tomorrow

Toast and dried fruit is what I would do or cereal with low amounts of milk.
