My push day has incline dumbbell press on it, however, my gym's dumbbells only go up in increments of 10.
This makes it hard to progress, so my question is..
Should I switch to incline barbell for progression then move back to dumbbells as I can do the sets?
Or should I just add incline barbell into my routine and do both?
Asking because I've heard doing both will lead to early plateaus.
Thanks in advance.

IMO barbell with the weight you can handle, then fatigue yourself completely with dumbbells at a lighter weight you can typically do 12-15 reps with.
This isn't really for strength so I can't comment on that, but you will get stronger regardless not sure what program you're running

I really don't see a problem.
