I would have to take creatine on weekends as well then, correct? So not to lose the "load up"

Don't bother with a loading phase, just start at 5g and continue at 5g once daily, timing is insignificant
Yes you can mix it with anything, water, protein powder, smoothie, juice, food, etc
Make sure to stay hydrated
