To for example on chest day hit incline for 5x5 and flat db for 4x10
and then next chest day hit flat barbel for 5x5 and incline db for 4x10. Is it all relatively the Same idea? As long as your upping weight - or do you want to progress on the same lift every chest day.

Basically would it be as effective to hit totally different exercises for every muscle group each time you're at the gym

thats fine
but i believe its more beneficial to stick to one way for 3-5 weeks and then switch for 3-5 weeks the other way
rinse and repeat.

I do what Tear says. Have 2 versions of the ppl I use. Every 4 weeks I swap out a few alternatives for change of pace

I have stuck with the same routine for a few years now and have still been getting stronger and making gains. Find what works for you and stick with it everyone is different.
