My grocery store had thighs and breast on sale $.89/lb. you bet your ass I bought 10 packs of bone in thighs/breasts. I cook 5 at a time, there's a nice veggie pack I buy at Costco that has broccoli, carrots, green/yellow beans, and red peppers in it. I throw a little garlic and olive oil in that shit and go to town.
Lately I've been leaving the skin on and putting lemon slices underneath with a dash of salt, heavy pepper. When I have excess calories, I'll hammer the breasts to flatten 'em out, do a quick egg w/ hot sauce/seasoning wash and some flour them out those on the skillet for a dank spicy chicken sandwich.
The other night I chopped the chicken up, carmalized some onions, chopped up pieces of baby swiss, put a little bit of fennel, garlic, and jalapeƱos, mixed it up and made some chicken burgers. They were dank, not sure on the calories though
Shitty chicken if it's a dollar per pound.
