with coconut creams and milk that is pretty easy to do... actually just fry up some onions in curry powder/chili powder / turmeric / and a touch of cumin or whatever else you like, then fry the vegetables in it, and add the fish... cook and then simmer to desired thickness (but not too long) and you're done. Throw some green onions and cilantro to make it look green and fresh lol.

you can even buy premade bottled curry in stores if youre willing to spend/have no time to cook - go read the bottles and see what they use to improve yours

here is a reasonable "white people" recipe for curry... if you do any searching, search for more authentic indian and thai curries... theyre the most GG

http://thaifood.about.com/od/thaicurrydishes/r/Easy-Thai-Red-Curry-Recipe.htm

and yeah that is 3X the amount guidelines recommend - but since you don't give a fuck, you can also try coconut CREAM to the mix (Rest in pasta poor heart)

yeah cholesterol is mostly a product you get from animal cell membrane and such...

then again, http://www.heart.org/HEARTORG/Conditions/Cholesterol/PreventionTreatmentofHighCholesterol/Know-Your-Fats_UCM_305628_Article.jsp# says "Eating saturated fat, and trans fat raises your blood cholesterol level."
