I'm new to all this fitness thingy (if you didnt notice yet)
So, my question is how does bulking work, I see people bulking , just eating what they want, when they want, in however portion they want and they get big as fuck with muscles, why does all that food turn into muscle instead of fat? Since it's high quantities of calories, etc, etc.

Bulking is a word for being in a calorie surplus.

Simple example if you need to eat 2000 calories to maintain your weight, eating more than 2000 calories a day would be considered bulking.

Bulking does not mean you can eat whatever you want however you want, dont ever fall for that.

Oh okay, that cleared it, kinda, but how do you not gain fat by going over your daily calorie intake? shouldnt that add up to fat? why does it turn into muscle

You will always gain fat on a calorie surplus.

then why would you want to gain fat? isn't the goal to lose fat and gain muscle?

Because you must eat to gain muscle, so fat comes along with it.
Ofc you can try to control it as best as posible, id rather be on a 250-500 surplus while others want to be on a 500-1000 or even higher surplus.

You can lose fat and gain muscle as a beginner but after that stage you must eat more to gain more.

Okay, so if you got muscle, but a lot of fat on top of it, and you wanna lose the fat without losing the muscle, what would you do?

You cut calories, carbs mostly.

Not a dramatic cut tho, that would give you a loss of muscle mass (keep in mind tho, cutting will always make you lose some) its like bulking, to gain muscle you have to gain fat aswell, like when losing fat you have to lose some muscle, control it as good as posible.
Its a long process, thats why keeping your bulking real will result in a better cut.
Instead of bulking with +1500 calories a day and then when the time comes to cutting you'll suffer due to that.

resistance training
cardio
carb cycling
boost your testosterone (with a natural protocol or with supplements or pharmaceuticals)
