So I started out half my max like I was supposed to, so I can build up to 5 sets, etc

Good news is upper body is still making progress, but squats are definitely getting harder... I'm at the point where I have to rest 3-5 mins each set and it's just getting difficult.

Im fine on sleep, do I need to eat more? Rest more?

I know that 3-5 is fine but soon I'm gonna need 5-8

i don't see what the problem is with resting for a long time in between the sets. Rest as long as you need to make the next set be it 3 min or 15min.

do you expect it to stay easy... if so this idea of becoming strong or jacked is not for you. If you want it bad enough, you will find a way to improve.

5 lbs progression is probably becoming too much too fast.

Stick with it if u want but pm me if u want a better program for purely strength gains.

No I'm definitely motivated!!

I just don't want to be resting a ton between sets. The author says to rest 5 minutes max, and if its past that I need to not add weight until I can do it. So im looking for solutions as to how I can do better

honestly as a nub i doubt you needa be resting like 5 minutes between sets. but even if you are it's fine unless you're under some time constraint. 5 x 5 stronglifts and other novice progs are kinda hit or miss tbh

you should work with a pro to figure out a better routine
