Anyone know of a good resource for this? Looking for some simple high protein lower calorie recipes that I can prep for 5-7 days etc.

Personally, I don't like prepping ahead of time, because this means you would be eating thawed out food, which is always unappealing. I get it, people work 5 days a week, it's not easy to cook everyday, but what I would do is try and cook fresh everyday anyway, except I would cook mostly veggies, this is much easier than cooking a meal that involves meat. You don't need to do a lot of prep ahead of time, you don't need to marinate anything, just run the veggie under the tap, lightly steam or cook or blanch it, and it's good to go. I can survive on this diet 5 days a week easy, and then when you finally have some down time on the weekend, you can then cook up a proper meal for yourself, or if you are like me, you can just eat out and treat yourself to something really nice, something that both tastes good and provides you with the much-needed proteins.
