While eating whole grain carbs, healthy fats, plenty of good protein (eggs, milk, chicken, beef... etc)? Would the body become over all more acidic?
Lack of fiber, lack of overall nutrients, perhaps a PH imbalance (although there is conflicting evidence here), digestive enzyme issues, and increased risk of certain types of cancer.
That's the effects of lacking in green cruciferous veggies that I can at least back up to a degree with evidence. There are a lot of other hypotheses floating around out there, but they do not have enough research to back them up yet.
