After the first week of hypertrophy you are supposed to take Monday off, that would leave it working chest only once a week instead of twice.

However, the second week would be
Mon - OFF
tues - chest/bis

thurs - back/tris
fri - legs/shoulders

The reason you seem to be having problems is that it is typical for us to imagine a week that starts on monday and ends on sunday. In bodybuilding weeks, a week is simply a CYCLE. For hypertrophy, it is an 8 day cycle - 3 days on with 1 day of rest. This makes the work week for training split up differently than a standard working week.
