sometimes I unknowingly eat gluten, and the next day walking to teh gym i get all sweaty, and I think back and I'm like oh fuck that probably had gluten in it, if it is psychological then how do i fix it.

Most root vegetables have a good amount of carbs. When I was cutting out pasta and bread, I ate a lot of potatoes, sweet potatoes, beets, rutabagas, turnips, etc (cutting potatoes, turnips, rutabagas, etc into thin rounds and roasting them in the oven with olive oil, salt pepper onions, and garlic is delicious)

Could very well be anxiety, those are all reasonable symptoms of anxiety that could be related to diet

Idk, it's easier to just not eat certain foods and not have to deal with any of those side effects.

on a serious note, you said potatoes suck, but why not try mashing them up? pretty dense calorie-wise and tastes good. you can season it too
