I know for a fact that my body did very well with 360-400g/day when I was around 180lbs. However during school and work it is nearly impossible to keep my diet optimized.

All about your goals I guess. For me, I'm not striving to be super huge or a body builder. So, I don't feel the need to experiment with high levels of protein that I don't believe I need.
I think its pretty normal for bodybuilder mentality to be willing to test so many things. Bodybuilders are like the guinea pigs of fitness.
Plus, I prefer the taste of carbs.
