Depending on how long you have been training, you will be lucky to put on a lb of lean mass in a month as a natural. Aiming for targets like 2 lbs a week will just result in more fat gain and a longer cutting phase. You measure it the same way you do your lifting progress, over time. You shouldn't be expecting a weight gain every morning you step on the scale. Should be looking at weeks.
Then again people have different goals, if you wanna dirty bulk go for it, just don't expect that extra weight to be lean mass lol.
