how long can i keep the bottle of alcohol after opening it before it goes bad? i've never seen it refrigerated on tv, so i'm guessing it doesnt have to be refrigerated?
the bottle says it's 21% alcohol. so for 1.5 oz, i guess it's 0.21 * 1.5oz = .315 oz of alcohol. so for this amount, how much extra water should i consume to compensate for the dehydrating effect of alcohol?
Amaretto can very well have a protein content due to its original ingredients being hazelnuts. However, that seems VERY high for protein in a liqueur.
I would venture a guess of maybe 1g protein and 15g carbs (from alcohol).
As far as refrigeration goes, that will not be necessary. It will stay on its own for quite a while if stored in a cool dark place in its original bottle. Months will not make a difference.
For water consumption. You would need around 4-6 oz of water for every 1.5 oz of amaretto to neutralize any dehydration that would normally occur.

Tolerance, unfortunately, will have be gauged by trial and error. A good rule of thumb is that a 170 lb man (on an empty stomach) will gain .02 alcohol BAL (blood/breath alcohol level) by consuming one alcoholic beverage per hour (one 6oz glass wine, one 12 oz beer, or one 1.5 oz shot of 80 proof - 40% liquor). So for 21% alcohol, every 3 oz would raise your BAL by .02%.
.08 is the legal driving limit, so you can expect that .10 is relatively intoxicated.
so that 170 lb man would have to drink 10 shots of amaretto to reach .10% BAL and become intoxicated. However, tolerance level will vary GREATLY - 5 shots for you might make you sick!
