what will happen if i replace complex carbs (whole wheat pasta, brown rice, wheat bread) with simple carbs (fruit), but keep the grams of carbs (and thus calories/macros) the same? will my energy levels change, increase chance of diabetes, or what? im guessing i have to brush my teeth sooner to avoid cavities, but i dont know what else will be impacted
i got a yonanas for christmas, which turns frozen fruits into something similar to ice cream texture wise. im getting better at replacing sugar with stevia, but im not sure how to replace it inside fruit

I would NOT advise that you replace your complex carbs with simple carbs. All carbs are NOT created equal, and even if calories are equal, slow digesting carbs have a much lower insulin response and thus promote fat storage much less. Simple carbs have immediate insulin response and usually lack fiber (such as white flour, white rice, sugary foods, etc)
HOWEVER, fruit is NOT bad for you. Having a dish or two of soft-serve fruit from the Yonanna machine would be absolutely fine each day. I would also recommend taking it post-workout with your protein shake. Fruits contain fructose which although is technically simple it nature, it is processed in the liver and gradually hits the blood stream over time, keeping insulin response low.
