Yes that is correct form in the video, but the alternating grip is optional. It depends on comfort and your own grip strength. Double overhand grip is good, but sometimes difficult without lifting hooks (because of the weight wanting to slide out towards you). Alternating grip is fine as well.
As far as the shins, yes you generally let the weight rub straight across your shins. A few suggestions - wear jeans when deadlifting ( I always do) - this helps a lot. Alternatively, get some long knee wraps and use them up the shins all the way to the knees. But I would highly recommend you don't consciously try to keep the weight from touching your legs. It's natural for it to do so, and avoiding that will cause potential injuries.
