I used to catch these with my hands as a kid, in a stream searching under rocks etc.
As well as loaches and something we called 'bullheads', IDK if that's the actual name of them.
A 'crayfish plague' in recent years wiped them out, looks like it's now a childhood memory for me.

At least they are, when I can be arsed to partake. I like the social aspect of crayfish boils, but it's usually a lot of work (popping 'em open and such) for not a lot of meat. I just had a couple of burgers at this event.
