Looks good.
Also recommended rest between sets? I'm guessing like 2-3 minutes between the sets of 5 reps?
I'm just so used to doing short rest lately for the pump and hypertrophy plan :)

Also any cardio or not yet?

Posted this the other day but you probably didn't see it. :p

yes about 2-3 mins between sets of 5x5 (or less if you feel ready enough).

Cardio is not necessary, although 20 mins of HIIT PWO would be fine.

I've continued cycling.  It seems to go away.  Was very slight this morning still though, but once I started cycling it went away.

I'm assuming it's a correlation with how I've jumped into training full force after time off due to the knee surgery.

I completely forgot about your knee surgery.

Yes that could definitely be an issue. The patellar tendon could be the culprit here. Definitely try to take it a bit slower.

Not the best pick. The best sources of protein are whey protein, egg protein, chicken protein, beef protein, milk protein. Hemp is a vegetarian option if you happen to be one. If you do not care about milk products, then whey is your friend. Hemp on total absorption rate is not even remotely close to whey, and also as far as amino makeup is also doesn't come close. Would it hurt you? no. But for the best gains stick with whey.

5x5 for strength
hypertrophy for size

maintenance should be eating your BMR cal requirements + whatever extra cals you need from exercise energy expenditure. Just google a bmr calculator.

How long would it take for me to put on ~10 pounds of muscle. Including bulking and cutting phases. I'm new to lifting so any exercises would help that work my upper body. My legs are good as of right now but later on I'd like to work on them.
