40 sets just on arms is a lot good job
especially if you are killing your tris on chest day and your bis on back day

I would usually do like 3-4 sets for 3-4 different exercises at 10 reps each.

never do reps. just do it until your body gives up. Simple.

Do one set per muscle group per years of age. That way you always progressively overload
