Make an outright effort to make 3 to 4 of your 7 weekly meals vegetarian or include some smaller amount of veg in each of your meals. Do whatever you want. make oven roasted veggies. no real cooking skill required, very cheap, and tasty as fok.

can use almost any vegetable, just make sure when you're chopping them up, all of the pieces are of similar size so they cook evenly. my favorites to use are broccoli and whole garlic cloves.

chop them all up, toss them in a bowl with olive oil and balsamic vinegar, season with rosemary and thyme (fresh if possible, but dried will work), salt and pepper.

put them single layer on a large baking tray, or 2, or 3, and throw them bitches in the oven at 375 until you see them begin to brown, and the veggies soften a bit, usually about 30 minutes, but it depends on how large you cut the pieces.

other good veggies for this:

pearl onions
mushrooms
asparagus
green beans
sweet potato
red potato
bell pepper
zucchini
butternut squash
jalapenos (gut the seeds and stick them in whole)

Fuck yeah! I'll definitely do that.

All those veggies you mention I love. Again I'm not a picky eater and I love all foods.
