Sometimes I make a huge pile of bean and chicken quesadillas. I have a big crock pot that I make batches of stuff in, like chili or chicken and rice. If I don't have enough time to cook then I'll make a lot of tuna salad for sandwiches.

Depends on if i work in the morning or at the evening, but usually: 200g chicken breast with either 200g carbs like rice or potatoes or broccoli, then 200g chicken with lettuce and feta cheese, then Lettuce Tuna Feta for dinner.
