the difference between supination and pronation is mostly in the forearm muscles involved, and the orientation and recruitment of biceps brachii fibers, but also in the inherent stability of the shoulder joint. the glenohumeral joint tends to be more stable in an externally rotated position relative to an internally rotated one (why upright rows are iffy)

interesting

would u say shrugs for traps should be done with palms facing away from your body?

no because the way the bar is positioned it is easy to maintain neutral scapulae (no protraction), and the humerus is still externally rotated (full pronation of the hand allows for this). in a bent over row the tendency is to protract the shoulders. you can do bb rows either way but be ware that its slightly easier to default into unstable protraction with supinated hands

overhand works the top part of your lat
while underhand focuses on the shorter lower part of your lat.

both are relevant, but for reference i prefer to perform exercises i personally feel the most helpful towards my workouts.
i do both fairly regularly though.

why do underhand when you can hold more weight with correct form double over.

It's literally the same movement for back development

Under hand grip is more of a risk to tear your biceps, if you can squeeze your lats you should be able to do it with either grip.
