so if it says a food is 1000 calories, and has 12g of fat, does that mean its 1000 calories + (9 calories per gram * 12 grams)? or Of that 100 calories, 9 grams of it is fat?

Since op seems serious and genuine, I'll bite.

Look at the wrapper or whatever food you're eating. Candy bar, chip bag, etc. and it should say 400 calories per serving or whatever it is. If you add up the fats, carbs, and protein, the number should equal 400.

Example:

30 grams of fat per serving = 30x9=270 calories
10 grams of protein per serving =10x4=40 calories
22 grams of carbs per serving =22x4=88 calories

Which equals 398 calories. Obviously not exact since I made up all the numbers, but hopefully you get the point and it helps. The numbers can be flipped around to whatever as long as it comes out to equal the calories per serving.

And hypothetically speaking, is it possible to still build muscle if I eat food with 1000 calories and 100% of it is fat?

no

ud prob be in HUGE caloric deficit and u would not be hitting the other 2 macros if 100% is fat

I mean... that isn't really answering his question though.

Not sure if it has ever been attempted or studied really thoroughly, but I would imagine that you could still make gains as long as it isn't an everyday thing.

I mean if you can somehow figure out a way to eat like 2,500 calories worth of fat in a day (278 grams of fat) and nothing else, it won't make you go catabolic or anything. I wouldn't advise it, but yolo.

If it's high in fat it has more energy per mass than protein or carbs. If you had some arbitrary magical substance that would always be 100g of either protein fat or carbs, and you decided how much you eat by how much mass you consume, consuming only fat for a day would nearly double your energy intake because of fats energy density. We don't really have a strict sense for how much energy is in a food, we really only have a relative idea of how much relative mass we ingest and how frequently we ingest it. You can still lose weight by eating a lot of fat if your total kcal intake is less than your expenditure for the day but I'd prefer to have a decent carb intake and keep fat only at a necessary level
